To kick of our new cocktail series, try our special rum and kola recipe. Make some rumless-rum for a delicious non-alcoholic option or add your favourite rum. A Cuba Libre with a twist! But be warned, you may want to plan ahead – some of these ingredients are crafted by time.
2oz Lime Oleo Saccharum + Juice (recipe follows)
optional: 2oz ‘Rumless’ Rum (recipe follows)
… or add: 2oz Wayward Distilling Drunken Hive
6oz Callister Craft Soda Craft Kola
Add ingredients to a glass filled with ice. Top with Callister Craft Kola!
Garnish with a fresh slice of lime for extra citrusy freshness.
Recipe for Lime Oleo Saccharum + Juice
Peel four limes, leaving behind as much of the white peel pith as possible, and add peels to an air tight container or ziploc with 100g of raw sugar. Gently muddle or massage to extract oils into the sugar. Refrigerate remaining limes for further use. Let sit at room temperature for 24hrs.
After 24hrs, add 100g of hot water to peels and juice of remaining limes. Strain and refrigerate for up to two weeks.
Recipe for ‘Rumless’ Rum
In an airtight container, add:
1 tbsp Browned Butter
2oz Blackstrap Molasses
50g Raisins
1 bag of Orange Pekoe or 1tsp Loose Leaf Unflavoured Black Tea
250ml Red Wine Vinegar
100ml Tonic Water
250ml Hot Water
Stir to incorporate and let sit for 1-2 days. Strain and refrigerate in airtight container for up to two weeks.,
